The chef known for Dubai’s viral pistachio-kunafa chocolate is back, presenting a tribute to the UAE with a special bar for the capital. Chef Nouel Catis, a Filipino dessert expert, introduces the Abu Dhabi Chocolate.
The Dubai chocolate phenomenon was hard to miss, captivating both taste buds and social media. Tourists worldwide sought it out, and it vanished quickly from shelves, becoming an international hit.
Now, Chef Catis shifts his focus to Abu Dhabi, crafting a chocolate that celebrates the capital’s rich culture and heritage. For him, Abu Dhabi Chocolate is more than a sweet treat; it’s an homage to the UAE, a nation he holds dear.

He stated, “I made the Abu Dhabi Chocolate as my tribute to the UAE, a place I’ve embraced as my second home. This bar continues my journey of creating chocolates that honor the country’s iconic cities, each with its unique flavor story.”

Aiming to craft a chocolate that embodies an Emirati city’s essence, this bar captures Abu Dhabi’s spirit. “This time, I celebrate Abu Dhabi, the proud capital — a city rich in heritage, vision, and culture.”
For Abu Dhabi Chocolate, Chef Catis moves beyond traditional vanilla, hazelnut, or pistachio flavors.
The flavor profile includes:
Saffron and cardamom — deep, aromatic, and timeless.
Tahina and dates — smooth, earthy, and deeply traditional.
Nostalgic crunch — a texture evoking cherished memories.
The chocolates are adorned with a thin, edible gold foil, a common decorative touch in desserts.
His brand, Sna’ap, is also launching salted caramel flavors to attract younger generations. These creations blend innovation with tradition, showcasing the chef’s ability to mix modern tastes with cultural stories.
“Each ingredient was chosen to reflect the hospitality, warmth, and cultural richness of Abu Dhabi,” said the celebrated Filipino chef.
Chef Catis collaborated with Rain Café, a local Emirati brand, to develop Abu Dhabi Chocolate, now available at the café.
